Local franchise owner Bob Gregg opened the fast-casual restaurant
Slim Chickens on July 25 in the former Del Taco storefront at 6100 W. Park Blvd., Ste. 100, across from Willow Bend Mall.
The Plano location is the first of 15 restaurants planned throughout southern Oklahoma and Texas, including one in Frisco that is set to open in September.
Founded in 2003 in Fayetteville, Arkansas, Slim Chickens serves chicken tenders, salads, Buffalo wings and wraps, as well as 21 dipping and wing sauces. The chain also offers chicken and waffles and several dessert jars served in Mason jars. The Plano restaurant has hired roughly 50 to 60 employees and also features a drive-thru.
Gregg, who helped develop the franchise program for Potbelly restaurants, said his new endeavor focuses on "life-changing chicken."
"When we found Slim Chickens it really resonated for us and was something we could get behind," he said. "Freshness of the product is first and foremost. We're excited to open a store in Plano."
