Owners Matt and Colleen Peterson said they opened Matador Meat & Wine in January 2011 as a result of frustration with the high prices that came with finding a quality steak at restaurants and grocery stores in the Dallas area.

“A light bulb kind of went off at that moment, and we started working on a business plan,” Matt said.

The Petersons said they were determined to become an affordable, neighborhood butcher. The result is Matador Meat & Wine, located at 8200 Preston Road, Ste. 100, Plano. The store purchases its meat from a mom and pop farm and packinghouse in Nebraska.

“When we opened the store, we told our original crew that there are two things that are never up for discussion: [the] level of customer service and the quality of the product,” Matt said.

Matador Meat’s most popular items include its prime filet ($36.99 per pound) and its selection of cabernet sauvignon wines ($16-$150). However, the butcher shop also offers seafood, catering and deer processing.

Before purchasing wine, Colleen samples each brand and style to determine which ones will pair best with the other products in the shop. She also selects smaller productions from vineyards in California, Oregon, Washington and Texas.

When it comes to catering services, the couple’s offerings began with simple barbecue plates and eventually grew to accommodate weddings, office lunches, parties and graduations.

Another unique feature at Matador Meat is its deer processing services. Matt said the shop processes about 200-300 deer a year, one deer at a time, with a turnaround rate of two weeks.

At the end of the day, Matt and Colleen come back to the concepts of customer service and quality as hallmarks of Matador’s commitment to excellence.

“We’d like people to come away feeling like they’ve gotten a quality product and that we, the staff, were helpful in pairing a wine [to go with it],” Colleen said. “Our biggest thing is that we want our customers to feel like they know us because we [know them].”
