Kinnor Coffee owners Aaron Brown and Ashley Brown always dreamed of opening a brick-and-mortar location in a cozy and welcoming space where they can continue to offer handcrafted coffee and unique cocktails.

Now, that dream is a reality.

“I fell in love with coffee because it brings peace to my soul, and I want this place to bring peace for people when they come through the door, “ Aaron Brown said.

Kinnor Coffee officially opened the doors to its brick-and-mortar location at 540 S. Castell Ave. on Jan. 16. The coffee shop serves coffee by day and cocktails by night in a 1930s house in downtown New Braunfels.

The husband-and-wife duo opened Kinnor Coffee in 2020 at Five Stones Brewery in New Braunfels. Aaron Brown said he developed an interest for specialty coffee and wanted to create a coffee program with the same principles of Five Stones, such as creating in-house recipes with high quality ingredients.

“We had a desire to create a business with high standards like Five Stone,” Aaron Brown said.

What’s in a name

Aaron Brown said Kinnor Coffee got its name from the musical instrument played by David in the biblical story of David and Goliath—the same story that gave Five Stones Brewery its name.


“We wanted something that tied into that [Five Stones concept] because we were in the same space, " Aaron Brown said. “There’s a reference [in the Bible] of David being a skilled musician, and music is a big part of our lives.”

The features

The menu features specialty hot and iced lattes created with homemade syrups, such as the maple latte, which is made with in-house ingredients, including maple, vanilla beans, cinnamon, brown sugar, orange peel, orange and cardamom. The menu’s offerings include several teas and cocktails.

Aaron Brown said he hopes to create a space where guests can spend time, engage with others and enjoy the unique atmosphere into the evening hours.

“I've seen people sharing announcements of their pregnancy or celebrating the life of a loved one at Five Stones, and those are like the moments we're after. [If people] choose to spend that here, it would be an honor,” Aaron Brown said.
