The Co-Op District in Hutto is approaching a new phase of development, with construction set to begin on three forthcoming dining and entertainment tenants in October.

Southside Market & Barbeque, an Elgin-based restaurant that serves slow-cooked sausage and other meats; Flix Brewhouse, a dine-in movie theater concept that offers craft beer and dining options for moviegoers; and Top Notch Burgers, an iconic Austin restaurant known for its classic diner-style menu comprise the Co-Op’s next round of tenants.

The businesses follow the City Hall and public library’s relocation earlier this year. All site plans for the three tenants have been submitted to the city and approved, city spokesperson Donna Simmons said.

Over the summer, the city added “Welcome to the Co-Op” signage to the site’s iconic silos. A layer of asphalt has been laid for a retail area adjacent to the silos, where Top Notch will be built, Simmons confirmed.

All infrastructure needed for construction is in place for both Flix Brewhouse and Southside Market, Simmons said.

As it stands, the tenants are awaiting the green light to go vertical.

Flix Brewhouse’s building permit application process is nearly complete, Simmons added, and should begin construction in the near future.

Southside Market announced in an Aug. 2 news release a delayed opening date for its Hutto location. Initially slated to open in late 2019, the business now anticipates it will begin serving up barbecue to Hutto residents in the second quarter of 2020, according to the release.

Bob Wunsch of MA Partners said construction on Southside Market is set to begin in mid to late October, with an opening date projected sometime in May.

“There are so many things going on behind the scenes,” Wunsch said. “So much of this is driven by tenants.”

Top Notch will follow a similar construction timeline to Southside Market, Wunsch said.

He added MA Partners is in the process of securing building permits for Flix Brewhouse and should have the green light to begin construction in 60-75 days, as of an Aug. 8 interview.
