In addition to brisket, pulled pork and sausage, the truck offers chicken on Thursdays, and customers can call ahead for ribs a day in advance. Other favorite items are brisket burritos and a mac 'n' cheese bowl, Shock said.
The food truck is open Wednesdays through Fridays 11 a.m.-6 p.m. and Sundays 11 a.m.-3 p.m. The business expects to add Saturday hours in 2024.
