Jack Gibbons, president of Front Burner Restaurants whose creations include Whiskey Cake and Mexican Sugar in Plano, is working on his next local project along with business partner Randy DeWitt. This time, it will be wine bar and bistro featuring rotating wines on tap. Set to be in the former Abuelo's restaurant, 3701 Dallas Parkway, adjacent to Whiskey Cake, Sixty Vines will feature 36 varieties of wine and a menu inspired by the culinary scene of Napa and Sonoma valleys to include pasta, pizza and desserts. Gibbons hopes to have the bistro open sometime this summer. "We want to challenge the status quo of wine culture by delivering a better way to enjoy wine—by the glass in an approachable environment and in a way the winemaker intended—[and] on tap, with the added benefit of promoting sustainable production methods and the well-being of our community and planet," he said. Since opening Whiskey Cake in 2010, Gibbons and DeWitt also introduced Mexican Sugar to Plano's dining options and were two of the first restauranteurs to begin capitalizing on the city's corporate growth along the Dallas North Tollway. The duo hope to expand their footprint in Plano as the city continues to grow. "There is now an impressive and growing list of global corporations who call Plano home," Gibbons said. "With this new corporate landscape, we're seeing more employees of all ages wanting to live closer to work and that has led to an expansion of the culinary appetite in our community."
