Managing partner Michael Nicol said Princi Italia’s first location in Dallas came to be after a trip to Italy. From there, he said, the popularity of the Dallas location prompted restaurant owners to open a second restaurant in Plano at West Plano Village in December 2015.


The restaurant is a modern Italian kitchen that focuses on fresh dishes that include homemade pastas, seasonal vegetables and unique flavor combinations only found in authentic Tuscan restaurants, Nicol said.


“We have always been about providing fresh foods using the best quality ingredients,” Nicol said. “We want to provide that traditional Tuscan cuisine in a very Tuscan-inspired environment with lots of natural light in an open, outdoorsy feel.”


Princi ItaliaNicol said Princi Italia’s recipes are not the “standard, red and white checkered table cloth” recipes found in most Italian restaurants.


He said Princi Italia’s dishes are well-thought-out and made from scratch, including the pizza dough and pasta.


Nicol said the house-made Italian sausage and pancetta offer unique flavor combinations, a benefit of making a lot of the items in house. Nicol said the key to the restaurant’s success is only using the freshest ingredients and changing the side dishes of the menu seasonally to ensure the highest quality of produce is used, keeping the main course true to the original recipe.


“Our clients are very faithful,” he said.
