About the owner
Merfolk's Specialty Coffee will serve coffee and tea with a focus on specialty brewing. Founder and owner Justin Monroe said his passion for coffee began when he worked at one of the Starbucks Reserve stores in Seattle, a program of Starbucks that offers more high quality coffees and special brewing methods compared to a typical Starbucks.
Monroe became interested in the "alchemy" of perfecting a cup of coffee when he worked at Dolce Neve Gelato on South First Street. He said there, he learned everything about running a small business.
Customers can get their specialty coffee fix made with espresso machines, French presses and siphon brewers at Merfolk's. Monroe has also partnered with Greater Goods Coffee Co. in Dripping Springs to offer brews.
"You can get your quick and easy lattes, cappuccinos, frappes whatever have you, but the focus is actually going to be on specialty brewing," Monroe said.
