Rockman has 20 years of experience as a pastry chef working in Michelin-star restaurants. She oversaw pastry operations at all of Austin’s New Waterloo properties such as the South Congress Hotel for nearly a decade. Rockman also defeated celebrity chef Bobby Flay on the Food Network show “Beat Bobby Flay” in 2018.
Rockman Coffee + Bakeshop will be Rockman’s first solo bakery and coffee shop. The shop will offer counter service, a sit-down dining area, a lounge area and a pickup window. The baking area will be next to the dining room so guests can watch pastry chefs as they prepare pastries and more.
The menu will feature croissants, cookies, focaccia sandwiches and bagels. There will be a full coffee bar as well as beer, wine, cocktails and non-alcoholic beverages.
