A new restaurant serving Latin American and Spanish cuisine called Saludos is coming soon to downtown New Braunfels.

The restaurant will be moving into the former Dittlinger building.

Saludos is locally owned by Israel Trevino—owner of Mexican restaurant Las Fontanas—and Allen Shy—owner of Blind Salamander Cantina and CRAFThouse—along with a couple of other minority partners.

Trevino said the team wanted to bring diversity to downtown New Braunfels and plan on preserving the history of the building.

Saludos will offer tapas-style food and shareable plates.


"Our entree section is [going to] be comprised of different foods from different regions of Latin America. For instance, we're [going to] have an Argentinian flat iron streak with a Chimmichurri sauce," Trevino said.

The restaurant will also feature a smaller Tex-Mex and traditional kids food menu.

Trevino emphasized that the owners will be giving back to the community.

"Just like we do with Las Fontanas, we give back to the community. Thousands of dollars go back into our educational system every single year that we're open, and we're [going to] do the same with Saludos," he said.


Saludos will also donate up to $10,000 for every follower that it gets on its Instagram prior to opening Trevino told Community Impact. The proceeds will be donated to schools in the area and their athletic programs.
