Ollie’s Barbecue opened at a permanent site at South Fork Fun, Food and Brew in early February.

The food trailer serves Central Texas-style barbecue that is internationally inspired. The family-owned business incorporates traditional cooking techniques from both Texas and Mexico, owner Oliver Gelleni said.

Some of the most popular menu items are the pulled pork sandwich, which is inspired by the Yucatán region of Mexico, and a barbacoa sandwich with smoked barbacoa on a fresh baked potato bun, Gelleni said. Ollie’s Barbecue will launch a new spring menu March 14.

The food trailer has operated at various locations in the Georgetown area since November.
