New Braunfels is now home to The Sauer Kraut, a food truck hailing from the Houston area and serving traditional German dishes.

Owned and operated by Eric Morse—who was born and raised in Germany—The Sauer Kraut has been delivering traditional German dishes to residents of the Sugar Land-Richmond area for nine years.

After a brief stint with a brick-and-mortar location post-COVID-19—which faced challenges due to its location and economic factors—Morse relocated his culinary venture to New Braunfels.

"I've been eating and cooking these recipes all my life, thanks to my mother," Morse said. "This is more than just food for me, it's my heritage."


What’s on the menu

The menu consists of a rotating selection of authentic German dishes, Morse said, including beef rouladen, jägerschnitzel, bratwurst and sauerbraten, each available on specific days of the week.

Morse said he is optimistic about the future and his new home in New Braunfels.

"I want to open a restaurant again and New Braunfels would be, I think, a great place for that," he said. "If New Braunfels comes to the food truck and there's a demand for a restaurant, I'll be opening [a brick-and-mortar]."
