Within two years, Gainz Bakery has outgrown its New Braunfels location multiple times.

Elaina and Ross Panagakos opened a production facility in January 2017. Within a few weeks, they already needed a larger location because of the influx of customers, Ross said.

“Originally, we just wanted to make online manufactured goods,” Elaina said. “That’s what we were thinking.”

Gainz Bakery began when Elaina created the OGB Muffin in their home kitchen using healthy ingredients from Ross, a former personal trainer.

The OGB Muffin had no gluten or refined sugar, but Elaina said many people were amazed by the taste. Soon after, she started selling the muffins online in Austin, but she quickly ran out of room in her own kitchen.

Elaina started looking for a small commercial space to use, and found one in New Braunfels. Still baking sweets that she only shipped to online customers, Elaina said people began showing up in-person to Gainz Bakery to purchase her food.

However, the original location didn’t have space to accommodate online and walk-in customers, so Gainz Bakery moved to Town Creek shopping center six months after the original opening.

The couple says they’re here to change the community and build a new, healthier community within Gainz Bakery.

“We’re much more than a restaurant or a meal-prep company,” Ross said. “We have huge aspirations. Our mission is to slowly change the way we view our bodies.”

Gainz Bakery offers diet and nutritional coaching, meal-prep services, made-to-order breakfast and lunch, health drinks and coffee.

Elaina says she enjoys being able to help so many people within the New Braunfels community and in the social media community as well.

“Plus,” she said, “I also get to be creative, and I get to make whatever I want, whenever I want.”

In August, the couple purchased a 6,000-square-foot location near Seguin that will serve as a production facility, which will allow them to serve more customers in New Braunfels.

Together, they hope to open a full-service restaurant in the near future.
