Behind the bar of Pallotta’s Italian Grill, a number of handcrafted cocktails are concocted, including the Italian-inspired Bellini cocktail.

The Bellini is a frozen drink made with peach syrup, Cook’s Brut champagne, peach schnapps and Daily’s Peach Puree, then blended and served in a tall glass.

Bartender Brandi McIntosh said the drink is a hit among customers during the summer because it is one of the few alchoholic drinks on Pallotta’s menu that is frozen.

“It’s very refreshing,” McIntosh said. “It is very sweet and easy to drink when it’s hot out. It quenches your thirst really well, especially in this Texas heat.”

In addition to the Bellini, Pallotta’s drink menu includes a number of specialty cocktails, martinis, wines and after-dinner drinks for customers to choose from. The family-owned restaurant has been in business since 1994, and its menu features a wide range of dishes, such as pastas, pizzas, salads, sandwiches and other Italian entrees.
