JAX Burgers Fries and Shakes, a locally owned restaurant business with nine Greater Houston area locations, offers a large menu of french fries.

A popular-selling option are the sweet potato fries ($3), said Jeremy Eaton, franchise owner of JAX in The Woodlands.


“The secret to our sweet potato fry is we found a cut that is three-eighths inches [thick] and extra long,” Eaton said. “If you get too big of a cut, then you’ll have the outside too dark and the inside too raw. If you have too little of a cut, you won’t get enough of the raw stuff.”


The fries, dusted with salt and pepper, are popular among customers on paleo diets as well as customers with diabetes because the sweet potato places the snack lower on the glycemic index, Eaton said. The fries pair well with JAX brand-name ketchup or Sriracha ketchup, providing a sweet and spicy taste, Eaton said.
