Belly of the Beast has opened in Spring for limited dinner menu service, according to a Nov. 3 email from owner Elizabeth Bille. Bille owns the restaurant—which offers American cuisine made through a Mexican American chef’s lens, according to the restaurant’s website—with Thomas Bille who is the restaurant's chef.

On Nov. 8, Belly of the Beast will begin offering its full menu. Previously located at 26510 Border St., Spring, the restaurant originally opened in February 2020.
