Revi's Grill has become a neighborhood staple for Fairfield residents since the restaurant opened in the community in May 2013.

Owners Steve and Kathy Skehan moved to Cypress and the Fairfield community with their two children, Cory and Staci, about seven years ago. In 2013, the family took over the restaurant formerly known as Dave's Hoagie House off Mason Road in Fairfield. The Skehans remodeled it, changed the menu and opened it as Revi's Grill.

Revi's offers a few of the popular items from the previous establishment, such as cheesesteaks, but also offers a wider variety of options, ranging from burgers to grilled salmon to healthy salads and wraps.

"This is now a restaurant with a menu that is put together for a family," Steve said. "We changed the whole experience completely around. We made it into a restaurant where everyone can find something off the menu."

When the Skehans opened Revi's Grill, the family wanted to give local residents more options in addition to the numerous fast-food restaurant choices in the surrounding area.

"We cook everything to order and really bring a homestyle meal to the customers," Staci said. "The quality of the food is something you would want to feed your family."

While customers can choose from one of several burgers or hot sandwiches on the menu, like the bacon cheeseburger ($8.99) or the six-inch cheesesteak or chicken cheesesteak ($6.49), there are healthy options available like the Hawaiian chicken ($8.99) and the grilled salmon dishes ($11.99).

The restaurant does not serve alcohol but does allow customers to bring their own wine, beer or mixed drinks in if they so desire.

The Skehans give back to the Cypress community as well, occasionally hosting a Keith Elementary Night, which serves as a fundraiser for the school in Fairfield where Kathy works as a teacher.

"During the summer we also work with Safe Haven Animal Rescue," Steve said. " We call it the 'Dog Days of Summer', and we donate some of our proceeds to help the organization find homes for animals. They've hosted adoption events outside the restaurant, so people can go outside to see the animals."

Aside from offering made-to-order dishes, the Skehans try to get to know their customers personally.

"We feel like we have built up a nice clientele of regular customers," Steve said.

Healthy choices

Staci Skehan has a bachelor's degree in nutrition and used it to develop healthy options for the menu at Revi's Grill at the beginning of the year.

"If there's a family that doesn't feel like cooking one night, we want them to be able to come here and not feel guilty about eating out if they're on a diet," she said.

Several healthy options on the menu include a variety of salads, including a Caesar salad and a build your own salad option, wraps and grilled salmon and chicken breast.

"[Staci] has done the work and research behind it to make sure the ingredients and dishes are healthy," Steve said. "She put a lot of effort into making the menu appealing to all who need those options."

Special options

In addition to the everyday menu at Revi's, there are typically two specials available that are not on the menu.

"We use it to see what people like," Steve said. "If it does well off the specials board, when we make adjustments to our menu about every six months, we'll add things that customers seem to like."

Special menu options have previously included dishes like the Hawaiian chicken club sandwich, the cod basket and a Reuben sandwich.
