The Cheese Bar’s signature mac and cheese is made with five blended cheeses, fresh jalapenos, breadcrumbs and Nueske’s bacon from Wisconsin. The dish costs $6.75 or $9.50 for a larger portion. The Cheese Bar offers a variety of more mature spins on cheese dishes, including macaroni and cheese, grilled cheese sandwiches and cheese curds, owner Troy Boyce said. “We make the mac and cheese fresh, and that’s very important,” Boyce said. “There’s no Velveeta in our cheese. It’s five different cheeses blended together. We’re taking mac and cheese away from the powder [ingredients]. We’re making adult mac and cheese, [but] the kids love our mac and cheese too.” Troy, who runs the shop with his wife, Melissa, said the restaurant will soon offer a mac and cheese flight, a combination platter of three different plates of mac and cheese, The Trio. The Cheese Bar also offers catering options, like cheese boards, and hosts events, such as cheese and wine pairings and classes.
