Gringo's Tex-Mex has broken ground in Conroe as of early January.

NewQuest Properties first announced a Gringo’s location would open in the Conroe Waterfront Center at I-45 and Drennen Road in a December 2021 news release.

The eatery was originally slated to open in late 2022, per the release, but Chief Marketing Officer for Gringo’s Heather McKeon said in a Dec. 27, 2022, email the company will begin to move dirt in January with a plan to open in late fall. McKeon said construction was not delayed.

"We have had other projects that have taken priority,” she said in an e-mail interview. “Plus, timing of a late 2023 opening was best for our operations."

The 7,200-square foot restaurant will be constructed next to Cheddar’s Scratch Kitchen, located at 2520 I-45 N., and per the Gringo's website, it will be the company’s 16th location.

The rest of the 115-acre tract of land at the Conroe Waterfront Center where Gringo’s will be is expected to see 300 high-end apartments and a second multifamily project in 2023, according to NewQuest Properties. Another 35 acres are marketed for residential, retail and hospitality use.
