Pincho Burgers + Kebabs
The restaurant is inspired by co-founder Otto Othman's mother's kebabs—or pinchos—and takes a Latin approach to classic American cuisine. Menu items include bowls, kebab plates, burgers, a tostone chicken sandwich and the pincho dog, which is a toasted bun topped with applewood smoked bacon, chopped pineapple, the eatery's signature sauce, cilantro sauce and papitas.

Having traveled throughout Europe performing music and boasting seven different nationalities as his heritage, owner Vlado Kolenic said he draws influence from his personal and professional background for the food at Blue Tuba. Creative menu items include escargot tacos and a Texas paella, which replaces chicken with crawfish tails, and "Texas-sized tapas," Kolenic said. A chicken schnitzel dish inspired by his Hungarian grandmother also seasons the menu, he said.
