Local entrepreneur brings Lucky Goat Coffee Co.’s first Texas franchise to Frisco

“We serve traditional Italian espresso drinks—from an espresso all the way to a latte,” Watkins said. “An example are our macchiatos, which are 3-ounces, like a traditional macchiato ... [our] cappuccino is going to be 6-ounces. There's no concept of a small or large cappuccino like you might find at other [coffee shops].”

Watkins said lattes are their most popular drink with the brown sugar caramel latte being the top seller.

Another crowd pleaser is their seasonal matcha lemonades.

“One thing that makes us somewhat unique in this day and age is our matcha is served by the order,” Watkins said. “We make the matcha shot as you order. We don't bulk make our matcha and then just pour it out of a container. Not every coffee shop does that.”

Watkins said her go-to drink right now is the 12-ounce oat milk latte because she is cognizant of her sugar intake. However, her favorite drink to make is the Luckyccino featuring signature cold brew, vanilla and cream.

In addition to drinks, Lucky Goat Coffee Co. also serves baked goods sourced from two local bakeries— Arielle Pastry Works and New York Bagels and Bakery. Quiches, kolaches, cheese Danish, chocolate croissants and lemon pound cake loaf have proven to be customer favorites.

Meet the franchise owner

Prior to becoming a franchise owner, Watkins earned a Master of Business Administration from Florida A&M University. She credits her corporate and nonprofit career path for giving her skills like navigating partnerships, leadership and management which have proven beneficial as a franchisee. However, she also points to her upbringing as being instrumental in her recently chosen career path.

“I am a military kid—my father was in the Coast Guard for many years. My mother was a business education teacher,” Watkins said. “There was just a lot of ‘Do a good job,’ ‘Anything worth doing is worth doing well,’ and ‘Be a person of your word.’ I was raised in that sort of household.”
