Restaurateur Fernando Barrera, who owns Latin Deli in Dallas, is set to open Josefina’s Cocina in Richardson in November, Barrera said. Following the soft opening in November, a grand opening will be held in December.

The menu, which features breakfast, lunch and dinner options, will include nachos, fajitas, chilaquiles, enchiladas, salads and more. Breakfast items, including omelettes, crepes and waffles, will be served all day. The drink menu will feature fruit margaritas, desert cocktails, cervezas, tequilas and mezcales.

What’s in a name?

Barrera said he chose the name of the restaurant as a tribute to his mother, Josefina Barrera Rodriquez, who was a single mother to four sons.

“[She] raised her children...with strong values and unshakeable faith. She taught them that nothing in life comes for free, that true success is earned through hard work, respect for others, mercy and gratitude,” Barrera said. “Most importantly, she reminded them to always believe in God and put Him first in every circumstance because without God, we would not be who we are today.”
