The company is owned and operated by Willie Meshack Jr.; his wife, Roberta Plaza; and her mother, Yolande Plaza. Roberta said she and her husband decided to open the new restaurant in Plano after moving to the city last year. She said Plano was the ideal place to start their new business.
“Everything is really close, and it's a newer, modern [location],” Roberta said. “Plano [businesses] kind of feed off each other. Everything is nice up here.”
Roberta said that the concept behind the restaurant was to balance traditional, smoke-style, craft Texas barbecue with Trinidadian-style side dishes made by her and her mother. Roberta’s family also owns the Caribbean Cabana, a restaurant based out of the Dallas Farmers Market.
Customers can choose among prime brisket, pork ribs, pulled pork and sausage with a variety of sides, including a baked potato, coleslaw, beans, and macaroni and cheese. Sandwiches are served with a fry-bake bread, Roberta said, a Caribbean-style bread that Yolande makes daily.
“We took that traditional way of cooking Texas barbecue and fused it. That’s the cornerstone of the business.” Roberta said. “We want to have deep-layered flavors and give that great, warm feeling we get from our customers, who love our food, back to them.”
