Although Pinch of Salt Pastries has only been in its current location in Grapevine since September 2023, the gluten-free bakery is celebrating its 10-year anniversary this year.

The backstory

In 2014, Abby Dumont and her husband, Jordan Dumont, opened Pinch of Salt Pastries as a wholesale bakery making gluten-free products for coffee shops across the Dallas-Fort Worth metroplex. The kitchen was located at 280 Sports in Southlake.

Oftentimes, coffee-shop patrons tried Pinch of Salt Pastries and were so excited about the taste of the gluten-free products they wanted to know if the wholesale bakery would make a custom birthday cake or a dozen donuts. Although the bakery didn’t have a storefront, people were knocking on its door making requests, which the Dumonts were happy to fill.

“People found us that way, it was very organic,” Abby said. “We knew we had that built-in customer base, [that] loyalty. We knew if we were to open a shop, ...we would have people that would come.”


The inspiration

While working at a bakery, Abby started following a gluten-free diet for different health reasons. She noticed that there were no gluten-free baked items available at the bakery she worked at or anywhere else she frequented.

“I was baking at home and playing around with recipes. I started adapting recipes to be gluten free,” Abby said. “[I thought] if I can make gluten free muffins at my house that I think tastes as good as a regular muffin, why is that not an option?”

When the Dumonts originally opened the bakery, Abby was the only baker and she created the recipes.


Today, the bakery is staffed by approximately 20 employees, provides wholesale baked goods to 55 shops across the metroplex and stocks items for the storefront.

“Now, I have more of a collaborative effort with my team. We have a really talented group of bakers, and they're great at helping me menu plan for the upcoming season,” Abby said. “The recipes are somewhat foundational at this point, and we often riff off of them.”

What’s on the menu

Abby said the bakery menu always features gluten-free pound cakes, donuts, cookies, cupcakes, cakes, cinnamon rolls and savory items with flavors rotating seasonally. In addition to gluten-free options, the bakery also offers dairy-free, vegan, soy-free, Paleo and nut-sensitive choices. The kitchen does not use peanuts; however, it is not nut-free.


Love Local Coffee, a coffee shop based in Fort Worth, provides full coffee services at the store, featuring drip coffee, classic espresso drinks, lattes, cappuccinos and seasonal options.

“My favorite thing [about owning this business] is my team, because they choose to be here,” Abby said. “It's obviously really special to get to provide allergy-friendly pastries, and it's very rewarding to experience people experiencing it for the first time, but it wouldn't be possible if I didn't have my team.”
