New York Butcher Shoppe is now open in Colleyville.

Owners Bryson and Ruth Nokes first encountered the brand in Greenville, South Carolina, last year. Ruth Nokes said she and her husband loved the premium meat, food and wine, and wanted to bring it to Texas.

What they offer

Among the offerings are beef, chicken, pork, veal and lamb, according to the website. Ruth Nokes said they offer Certified Angus Beef, dry-aged steaks, Australian and Japanese wagyu, classic New York strip steaks and housemade sausage.

The business also offers call-in orders for hot meal pick-up three days a week.
  • Monday: Roasted whole chicken, mashed potatoes and gravy and salad
  • Wednesday: Pot roast, mashed potatoes and gravy
  • Friday: Prime rib, au jus and horseradish cream
On Saturdays, meat from a smoker is for sale by the pound starting at 3:30 p.m.


The offerings include pork tenderloin, whole chicken, chicken wings, baby back ribs, duck breasts, pork butt, beef try-tip and beef short ribs. Ruth Nokes said they would also take requests.

What else?

In the wake of the opening, Ruth Nokes said the business will now open an hour earlier than originally scheduled on Sundays due to demand. She said the business plans to start its Wine Club in September.

The original New York Butcher Shoppe was founded in 1999 in Charleston, South Carolina, by the D'Elia family who brought their Brooklyn-Italian influence to the south, according to the website. The company has franchises in seven states, with this location being the first in Texas.
