Gilanfar used to work for the corporate sector of the Cheesecake Factory, and said she wanted to wait for the right opportunity to open her own restaurant. Her opportunity arrived when a space that used to be a dry cleaner in a shopping strip became available near where she lives. Gilanfar took the chance and opened Twisted Tortilla in 2011. Twisted Tortilla is what Gilanfar calls a “fresh Mex” restaurant, meaning the restaurant uses fresh ingredients. Gilanfar said there was nothing like it in the area when she opened it. “It’s not related to Tex-Mex,” she said. “It’s more of a Mexican influence on fresh, quality food.” Twisted Tortilla A burrito bowl ($7.89 without guacamole) can include anything in a burrito without a tortilla.[/caption] The restaurant is a fast-casual concept that has some similarities to larger chains, such as Chipotle and Qdoba. But the difference between Twisted Tortilla and the larger chains is the ingredients, Gilanfar said. “This is similar, but we’re told that it’s just much fresher and has more variety in the ingredients,” she said. The four main dishes at Twisted Tortilla are a burrito, a rice bowl, tacos and a salad. Customers can choose from a variety of meats, vegetables and other toppings to customize their dish. The restaurant also has four types of tortillas: flour, whole wheat, spinach and cayenne pepper. Other specialty dishes include the tilapia fish tacos ($8.99), Slam’n Salmon Rolls ($8.99) and tortilla soup ($6.29). Twisted Tortilla also includes a full bar and more than 100 hot sauces for dine-in customers to try. Gilanfar said the name for the restaurant came from a friend she used to work with. Her friend came up with a list of names after Gilanfar asked her to come up with one that was cool and trendy. Eventually, the two decided on Twisted Tortilla. “We’re pretty flexible and twisted in a sense that we’ll do pretty much anything with a tortilla,” Gilanfar said. “…We’re not set on the straight and narrow.
