Colorado-based breakfast chain set to open Jan. 30 in Austin

The Egg & I Restaurant, headquartered in Lone Tree, Colo., will open its first location in Austin on Jan. 30.

The eatery is located in the Northcross Shopping Center at 2525 W. Anderson Lane. It will host a private, pre-opening training day Jan. 29 and will donate 100 percent of that day's proceeds to the Austin Humane Society.

"We are excited to partner with this newest The Egg & I Restaurant in Austin and are grateful for their support," AHS Public Relations Manager Lisa Starr said.

The first 144 guests who visit the restaurant before 9 a.m. Jan. 30 will receive a free $20 gift card as well.

"We've heard some people plan to camp out the night before in order to be among the first twelve dozen guests through the doors when we open at 6 a.m.," General Manager Jimmy Howard said. "Everyone is very excited about this event and about our new restaurant opening. We can't wait to be a member of this incredible community, and we already feel very welcome."

The Egg & I Restaurant offers breakfast and lunch menus daily from 6 a.m. until 2 p.m. On the weekends, the restaurant stays open until 2:30 p.m.
