Bastrop is set to welcome new dining options, including Einstein Bros. Bagels, LongHorn Steakhouse and Texas Roadhouse. Meanwhile, Bastrop Cafe is cooking up an expanded menu under new ownership.
Einstein Bros. Bagels
Einstein Bros. Bagels has plans to open a new location in Bastrop. The large American chain is best known for its freshly baked bagels, sandwiches, coffees and other baked goods.
According to Public Relations Manager Gabriel Washburn, the company plans to open a location in Bastrop, although an opening timeline is not yet available.
The business will be located in the new mixed-use development spearheaded by Pearl River Companies—Sendero.

LongHorn Steakhouse
Bastrop is poised to get its first LongHorn Steakhouse in the upcoming Burleson Crossing East in 2026.
Construction on the 5,780-square-foot, $2 million project is scheduled to begin in June and finish in late January 2026, according to a filing with the Texas Department of Licensing and Regulation.
Part of the Darden Restaurants group, which also owns brands like Olive Garden and Cheddar's, LongHorn Steakhouse serves a variety of fresh-cut steaks, seafood, chicken, lamb and more.

Texas Roadhouse confirmed plans to open a location in the Sendero development of Bastrop by spring 2026.
Sendero will be located at the intersection of FM 969 and SH 71 and will incorporate new dining, retail and health and wellness businesses into the 75-acre mixed-use development.
The restaurant is known for its signature hand-cut steaks, ribs, various scratch-made sides and whipped honey cinnamon butter served with fresh-baked dinner rolls.
