Trianon Coffee will open its second location with more food options as part of an upcoming mixed-use development called the Roundabout in Buda.

Led by Buda resident Tim Dowling, the project will potentially break ground later this year and include about 65,000 square feet of retail space, according to previous Community Impact reporting.

Trianon Coffee opened its first Bee Cave store in 1985, and now-owners Charles Emile Lauriat and Stacy Lauriat assumed operations of the cafe eight years ago.

The couple has had multiple offers to open a second location, according to Emile Lauriat. He said he felt like the Roundabout in Buda was the best option for expansion because Dowling is building it on a foundation of community.


According to Emile Lauriat, the owners are hopeful that the new Trianon location will open in 2027, but the timeline has yet to be confirmed.

In developing the plan for a new store, Emile Lauriat said they will still be a “coffee-first” brand, and prioritize a large selection for customers. Trianon’s offerings include a variety of organic, microlot, single-origin, specialty blends and decaf coffee.

According to Emile Lauriat, he hopes to add more food options to the Buda location with a fully operational kitchen. Additionally, he plans to serve breakfast all day, salads, sandwiches and pastries.
