Tex-Mex and Mexican restaurants continue to open along the I-35 corridor, with more than seven opening in the San Marcos, Buda and Kyle areas in 2023.

Each restaurant offers its own blend of flavors inspired from Mexico, with a local twist. Menu items include the Buda Taco at Taco Clem, which comes with carne guisada, potatoes, bacon, cheese and pico de gallo. Located in San Marcos, Balcon serves the Gobernador Taco that comes with cheese, shrimp, pico de gallo and house salsa. In Kyle, customers of Pollo Campero can order the Empanada Trio that is stuffed with freshly pulled chicken, roasted corn, peppers, onion, and Monterey Jack cheese.
