“I wanted to do something with my background in French cuisine but have always had a deep appreciation for East Asian cuisine and in particular gua bao,” Mullikin said. “I see gua bao as kind of a blank slate, so I use it as a vehicle to showcase all of the foods I love.”
Gua bao, a soft steamed bun, is traditionally a part of the pork belly sandwich, but the Bunboy menu also has other options for it aside from the classic, including chicken and waffles, lobster rolls and duck L’Orange. Mullikin makes the dough by hand, making about 100 a day.
“I’ve got some really cool things in the works now, like bao dough cinnamon rolls and beef wellington kolaches,” he said.
