Since October 2021, owner and chef of Con Todo Joseph Gomez has been showcasing a taste of the Rio Grande Valley at Celis Brewery.

The backstory

Gomez started baking during the start of the coronavirus pandemic. Growing up in the Rio Grande Valley, he recalls watching family members cook and being fascinated by the act.

In 2021, he decided to expand his offerings by adding cooking to his repertoire and opening up the Con Todo food truck in North Austin.

What they offer


The vision of the cuisine is brought to life by only two people: Gomez and his right-hand cook, Fernando.

The eatery sources corn for tortillas, beans and some chiles from Tamoa, an enterprise that purchases surplus corn from small farmers that grow corn for their own consumption, according to its website.

Gomez said the menu items new customers should try are the Bistec Estilo Matamoros taco, Pollo en Mole taco and Alambre taco.

For the holidays, Gomez said he’s planning to sell buñelos and is hoping to offer tamales as well.


The impact

Gomez said the large Rio Grande Valley community in Austin has shown appreciation for the food but individuals unfamiliar with the border region need more introduction to the cuisine.

“People are confused at first. They’re like, ‘Well I don’t know what a Bistec Estilo Matamoros taco is,’” Gomez said. “It’s a lot of talking to people, storytelling and just being more open about it.”

Gomez said despite the burnout that comes with working in the food industry, he enjoys playing a role in the community that unites people.


“I love food so much and the thing I enjoy most about it is how it brings people together,” Gomez said. “No matter what background you come from or what differences we have, food is usually the central focus point.”
