How we got here
Owner Laura Galos connected with her Finnish roots during the coronavirus outbreak. Galos said she was reminded of early memories of baking traditional pulla bread with her grandmother and she was inspired to use this to connect with the community during isolation.
“The word Fika is actually a Swedish word for coffee breaks so similarly my grandmother and I would share these daily treats and coffee when she would visit,” Galos said. “In that same spirit I started delivering boxes of Nordic baked goods around town in 2020.”
The impact
Galos’ impact on the community has since grown as the business’s baked goods are now available at its brick-and-mortar location shared with Malone’s Coffee and in local coffee shops and grocery stores throughout the metroplex.
She said the best part of the business is witnessing how community members do fika.
“For some people it’s a real visceral connection to their ancestry or childhood memories,” Galos said. “Some of our customers have been able to incorporate us into their holiday celebrations or mark big life moments.”
On the menu
The restaurant features Nordic baked goods and snacks. Some must-try menu items include Swedish cardamom buns made with fresh ground cardamom and pearl sugar and Nordic seed crisps, Galos said.
“Food is our means to the end and the real mission is to spread the spirit of fika in our community which is that moment of connection and rest on a daily basis,” Galos said.

For the holidays, Galos said the business is serving her grandmother’s pulla bread wreath, perfect as a sharing dish at the Christmas table. The business will also offer a Swedish Christmas limpa. Galos said customers should pre-order for the holidays as the specialty items are not part of the bakery’s daily menu.
