Sunnie Fox opened Texas' first Eileen's Colossal Cookies franchise in March. The company has locations in six other states, and Fox said the bakery had to gain local name recognition. "Every month, our customer count has increased probably 15-20 percent," she said. "That's a pretty significant amount for nobody really knowing what Eileen's is."
The Cedar Park bakery offers a variety of cookies in different flavors including pizza-sized cookie cakes.
"We bake our dough from scratch here," Fox said. "We know what ingredients are going into the dough, and we bake it fresh all day long."
