Casey's Food Court, located at 2530 Shell Road, opened in mid-June after the site and vendors received approval for permits and passed health inspections from Williamson County officials. The site is currently home to two food trailers: CJ's Big Boy BBQ and Uncle Knock's Louisiana Cuisine. In the next few weeks, Casey's Food Court plans to add additional vendors including Sugar & Spice Cake Co. and possibly Hot Doggin.

"Now it's just a matter of putting the vendors in place," said August Higgins, marketing director for the site's developer, J. Paul Aubin Real Estate.

Casey's Food Court has space to house up to seven or eight trailers and plans to offer a wide variety of foods, Higgins said.

The food court provides picnic tables and umbrellas for guests visiting the trailer park. The park plans to be open Mon.–Fri. for lunch and dinner. However, each individual trailer sets its own hours, and some will also offer weekend hours. CJ's Big Boy BBQ

Owner Chris Rodriguez opened CJ's Big Boy BBQ on June 18 at Casey's Food Court. The trailer is open Monday–Friday and serves a variety of barbecued meat, including brisket, chopped-beef sandwiches, Frito pie and baked potatoes. Rodriguez has been cooking barbecue for more than 19 years and previously worked in catering. Uncle Knock's Louisiana Cuisine

Owner Whitney Vernon opened Uncle Knock's Louisiana Cuisine at Casey's Food Court on June 20. The trailer offers a variety of traditional Louisiana foods including fish or shrimp po'boys, burgers and gumbo, as well as $5 breakfast and lunch boxes. Sugar & Spice Cake Co.

Julie Stribling is planning to open Sugar & Spice Cake Co. at Casey's Food Court in early to mid-July after completing the inspection process. The trailer will offer snow cones, ice cream and deli sandwiches.
