A new food truck specializing in soft, frosted sugar cookies is opening soon in New Braunfels.

The cookie truck's home base will be at the Mill Street Youth Center, which is located at 430 W. Mill St. Lyssie Lou's Cookie Co. will also continue serving through New Braunfels communities and surrounding areas through pop-ups, events and special appearances, owner Alyssa Gallion said.
Lyssie Lou's Cookie Co. truck will be serving its signature soft, frosted sugar cookies made with 100% organic ingredients, buttercream icing and natural dyes. Lyssie Lou's Cookie Co. sells vanilla and lemon frosted cookies, and also offers a monthly rotating menu of cookie flavors inspired by Tucson Arizona—which is where Gallion grew up—and Texas.
