Blackbird Bakery, founded in 2008 as an online wholesale business, opened a brick-and-mortar store on Oct. 2. Karen Morgan, chef and founder of the gluten-free and nut-free bakery, said the reaction from the community has exceeded her expectations.
“The reception from the community has been wonderful,” she said. “We do a little of everything, and everyone is really excited to have a gluten-free bakery out here.”
Morgan said although the bakery had a high demand for pies and cookies during the holidays, doughnut holes and breads are her most popular products.
Blackbird Bakery sorghum flour-blends have been available since Jan. 4 at the H-E-B stores in Bee Cave, Four Points, Lakeway and West Lake Hills.
