“Just about a month ago, we opened a full kitchen, so then we added burgers, additional appetizers, salads, fries [and] chips,” co-owner Keith Odom said.

Prior to opening, co-owners and friends Odom and Jonathan Brooks had the idea of turning a vacant building in downtown Georgetown into a butcher shop and restaurant. Co-owner Landrum Turner became involved, along with general manager Miles O’Connor.
“We all just kind of talked about it, and finally one day did it,” Brooks said.
Staying local
Tejas’ butcher shop includes cuts of beef, pork and wild game.
“It's all local meat from the state of Texas,” O’Connor said.
However, the shop's A5 wagyu beef, is the exception. Brooks said the meat, which customers love, is flown in from Japan during the Christmas season.
“We have a pretty solid group of regulars that come in,” Odom said. “We do custom orders on certain things ... especially at the holidays.”What else?
On almost any day of the week, customers have a range of activities to participate in at Tejas.
Wednesday night trivia and Thursday night live music both begin at 7 p.m. Meanwhile, paint nights and cornhole tournaments are on the first and last Tuesday of each month, respectively.
Additionally, visitors to Georgetown’s First Friday event can stop by Tejas’ outdoor bar throughout the evening.
“It's the best place on the square,” Brooks said.
