For the past 15 years, Lex Janes said he had the idea to open a second Scott’s Oyster Bar location in the back of his mind. 

But it was not until he moved to Georgetown three years ago that his vision became a reality.

“It took a little while to convince myself [to open it],” Janes said. “It’s just always been something I wanted to do.”

Janes got to know the owner of the original Scott’s Oyster Bar, Scott Mitchell in Amarillo through his work as a sales representative for food-service distributor Ben E. Keith, and Janes said he knew he found the ideal place to carry on the oyster bar’s legacy in Georgetown.

“There is nothing quite like it here,” Janes said. “I kind of wanted to take away the need to go into Austin if you wanted to get a decent variety of oysters.”

Janes, who graduated from Round Rock High School in 1992, said he enjoys bringing a variety of seafood to Georgetown.

“This style of cooking, you can kind of blend,” Janes said. “I mean fish and a lot of these items are kind of a blank canvas, so you can [do a lot with them].”

The restaurant gets fresh oysters three times a week and tries to have four different options available at all times. Janes said the restaurant stocks East Coast and Gulf oysters, including Blue Point oysters from New Jersey, year-round.

Janes did not get into eating seafood until his 20s, but he said he enjoys playing around with what drinks and food complement each other.

“Just the way [beer and wine] pair up with [seafood is fun],” Janes said. “I go over with the staff what to pair, or we put it on the board [for the customers to see].”

Janes said bringing fresh oysters to Georgetown and creating food that reflects the region is important.

“[Customers think] it’s cool that we feature these items,” Janes said. “People say that [our] food is good and like what [they] had growing up.”

Janes said there is more to come at Scott’s Oyster Bar, including taking advantage of the full bar and outdoor patio for crawfish boils in the spring.
