Located on the downtown square, Georgie’s brings together an array of fresh offerings backed by experienced ownership.

The seafood restaurant opened in May, and has been met with a warm welcome from Georgetown residents, Area Manager Brandon Sanchez said.

“We are incredibly grateful [to be] in the community and [be] in Georgetown,” Sanchez said. “It's been a beautiful experience with everybody.”

On the menu

Chef and operating partner Shane Stark, owner of Mongers in Austin, curated a menu with freshly sourced ingredients. With ingredients sourced from Texas to the East Coast, Stark serves up fresh-shucked oysters, tuna poke tacos, crab cakes and more.


“[Stark] is really creative as far as sourcing and getting the best product that we can possible,” Sanchez said.

In addition to seafood, Georgie’s also offers a selection of chicken, beef and vegetarian options. Other popular items include the hush puppies with hot honey and tarter sauce; fried green tomatoes with jalapeno ranch and crispy bacon; and the chicken and farro, which is made with roasted chicken thighs, truffle farro risotto, cauliflower, pecans and a balsamic reduction.

“Food wise, there is something for everyone and [Stark] built that with purpose and with intention," Sanchez said.

Meet the owners


Along with Stark, Matt Luckie and Mike Farr make up the triple threat behind Georgie’s, bringing together years of experience in business management and ownership in the Austin area. Luckie owns and operates several businesses, including two Mean Eyed Cat locations in Austin and Driftwood, and Midnight Cowboy in downtown Austin, while Farr owns Round Rock Amp, previously known as Nutty Brown Amphitheater.

The team had always aspired to open a project north of Austin, Sanchez said. They settled on Georgetown after exploring and getting to know the local community.

“The reception that we've gotten has been stellar,” Sanchez said. “This is who we're doing it for and being a part of this community in Georgetown was such a huge one for us.”

Looking ahead


Being downtown, Sanchez said the team is looking forward to engaging in events such as the Lighting of the Square and the Red Poppy Festival.

“It's nice to be a part of a good group of other operators and part of a town that really cares about its people,” Sanchez said. “We're excited to see where the future takes us.”

Additionally, the Georgie’s menu changes quarterly to highlight seasonal offerings. Currently, the restaurant is showcasing high-acid and lighter wines as well as a frozen Irish coffee.
