The backstory
Galaxy Bakery and Coffeehouse was purchased by co-owner Ike Thorpe in 2012 when it focused on cupcakes. Thorpe was raised in a culinary family and he recalls childhood memories of his family joking about making their own bakery.
“When making bread with my dad, I’m sure plenty of families have this experience but, we would say, ‘We should open a bakery,’” Thorpe said. “Of course we never did it...But when I had the opportunity to buy this I was like, ‘Let’s just do it. Who knows what can happen.’”
On the menu
After its acquisition, the bakery expanded to offer cookies, cannolis, scones, muffins, custom-order cakes and croissants. The business makes an effort to support the small business community by purchasing eggs from Hallsome Farms in Walburg and Cuvee coffee roasted in Spicewood, as stated on its website.
All synthetic fats were removed from the business and were replaced with a real butter base, Thorpe said. The inspiration for the change came from his upbringing in New England.
“I was just trying to recreate the nostalgia we had,” Thorpe said. “I’ve gone back to New England as an adult and I was really disappointed in all the bakeries because pretty much everyone stopped using butter. Everything is synthetic these days and it’s an abomination.”
Thorpe said new customers should try their luck with a scone available in flavors cranberry orange, blueberry, almond and raspberry.
What's next
Even after 13 years of business, Thorpe said passerby still enter the bakery with mentions of not knowing it existed. He said he hopes to expand the business by one day creating locations in Round Rock, Austin and Belton.
