PhoEver Diner serves fresh, healthy Vietnamese food

Gina Nguyen and her long-time friend Thao Phan decided to open PhoEver Diner in Georgetown in January 2020 when she noticed Georgetown residents did not have an authentic Vietnamese restaurant available to them and instead had to travel to another city to get some.

“If they want to buy healthy food or Vietnamese food, [patrons] have to go all the way to Austin or Round Rock,” Nguyen said. “So we thought we’d make it convenient for them here.”

Located next to Randalls on Williams Drive, the family-owned and -operated restaurant serves traditional Vietnamese cuisine.



It also specializes in pho, a Vietnamese soup made with broth, rice noodles, herbs and meat such as chicken or beef.


This is also the second restaurant for Nguyen who also owns a Vietnamese and Chinese restaurant in Hutto. Nguyen added that she got into the restaurant business after learning how to cook from her mom.

Nguyen said another driving force in her opening the restaurant in Georgetown was a noticed heightened desire from patrons for healthier options.

Vietnamese food tends to be more healthy than other offerings because it is far less greasy as soups are cooked in freshly made broths and dishes use little oil for seasoning, she said.

“A lot of people come in and get the soup with chicken,” Nguyen said. “It’s more healthy.”

She added that the bone broths used at PhoEver Diner are boiled for a couple of days before being served to patrons.



“You can buy [the broth], and there’s some people they make it from the powder,” Nguyen said. “We make it from the bone.”

The restaurant offers several pho variations including some with chicken, meatballs, shrimp or tofu, but it also has fried rice, a Vietnamese sandwich made with charcoal grilled pork, and pan fried or stir fried noodles.

Nguyen said one of her favorite menu item is the vermicelli, a Vietnamese rice noodle salad bowl that can include chicken, beef, shrimp or all three.

The vermicelli also comes with a specialty mayonnaise made in-house, she said.

“[PhoEver Diner] is about healthy food,” Nguyen said. “We want to show people how the Vietnamese food [is] like because it is healthy food.”
