When scouting locations for their new wine bar, business partners David Roberts and Kevin Stuart found an opportunity to create the laid-back vibe they hoped for in a space that was the former home of Scott’s Oyster Bar, which closed last November.

“We saw the potential,” Roberts said of the restaurant space.

Shade Tree Wine Bistro opened in May on North Austin Avenue just north of downtown Georgetown. The bistro’s menu features a variety of wine and beer as well as lunch and dinner specials and a Sunday brunch.

Shade Tree’s aesthetic took a few cues from a restaurant Stuart previously ran in Killeen. Roberts said they tried to highlight the building and property with Shade Tree’s interior and exterior design.

Roberts said the bistro’s style focuses on wine, food, people, and how the three blend together.
