Xian Sushi and Noodle owner Tin Ling is currently in China learning how to make traditional filled buns called Bau’dup for his new restaurant with the same name.

Bau’dup will open in February behind the under-construction Alamo Drafthouse Cinema—set to open sometime this year—in Mueller, according to Ling’s wife, April Zheng.

In February a third Xian Sushi and Noodle location is also slated to open in the Domain next to Zara on Esperanza Crossing. Zheng said this location will focus heavily on dim sum, a traditional Chinese style of cuisine that serves bite-sized portions of food in steamer baskets or small plates. The restaurant will also serve traditional hot teas and will be decorated in a more classical Chinese way.

The Chinese couple opened their first Xian location at 13201 N. RR 620, Ste. U208, Austin, in 2008, and then opened their Mueller location at 1801 E. 51st St., Ste. C370, Austin, in 2012.

“[Ting Lin] wants to bring a lot of the good food from China over here so everybody can get a taste of it,” Zheng said

Xian serves a variety of hand-pulled noodles, vegetable and meat dishes and sushi rolls.
