Since opening in November 2013, Nelson Adams has maintained his business dynamic of providing healthy lunches through Fresh. Healthy. Delivered., but is also tweaking things along the way. "My main focus is to provide a healthy [meal] alternative for busy professionals," Adams said. In October, Adams began offering customers an option to pick up meals. Lunch plates are $6.50 per order and the menu changes regularly. Past menu items have included red beans and rice, lasagna, meatballs and grilled chicken. Whole grain breads are also available and baked in-house. Adams said the company is also actively working to expand its menu to provide take-and-bake dinner options, which are prepped dishes that will require heating or additional cooking. Fresh also allows customers to place orders days in advance. Although the details are still being sorted out, Adams said Fresh will also sell baked goods at Two Rivers Market, which is expected to open in January.
