Le Cowboy is a "Spaghetti Western-inspired" Italian concept from former Olamaie and Carpenters Hall chef Grae Nonas. It is set to open Aug. 10. The restaurant will be open for dinner Monday through Friday in the small building detached from the main space that used to house Eastside Cafe.
On weekends, the space will be taken over by Heritage Seafood Market, a concept from Texas native Ben McBride. The market will offer a selection of fresh seafood from the Gulf of Mexico.
In the parking lot, former Pitchfork Pretty Executive Chef Max Snyder will open Rogue Radish in early August; it will feature a vegan grain bowl with locally sourced ingredients.
