“We started a vegan food truck, back when Torchy’s [Tacos] was the only food truck in town, over there on South First. We had biscuits and gravy on the menu, called it Biscuits and Groovy, you know, because it is a fun Austin-ey name. It was all people wanted,” Lach said.
The Biscuits + Groovy food truck in Hyde Park has operated for 11 years just outside of Peddler Bike Shop. Lach also has a second location near Barton Springs.
The staple dish is three homemade biscuits with gravy, sausage, pepper and chives. There are five other options that include different combinations of potatoes, cheese, jalapenos and eggs.
The shop also sells fresh jams and orange juice made with only oranges bought and squeezed daily.
Each dish can be made vegan, and staff ask every customer which option they prefer.
The dishes are named after disco legends: The Aretha for Aretha Franklin, The Johnny for Johnny Nash, though everyone assumes it is Johnny Cash. Both food trucks play disco music in the seating areas.
After 11 years, Lach said it is not his favorite type of music to listen to, but the customers enjoy it.
Lach said his main source of customers are tourists, even at the Hyde Park location. He said it is because his restaurant frequently shows up in Google searches for “best Austin breakfast.”
“I had no idea how they were finding us, but I wasn’t complaining,” Lach said.
Lach has been featured on TV shows on the Food Network, Travel Channel and Cooking Network.
“I started making really fun vegan things, back when there were not a lot of vegan options in town. I thought I would share it with other people, for all the work that went into it. And it was nice to get paid for it, but I just like cooking,” Lach said.
