“I grew up with a Midwest flavor profile, and that’s not what’s around here,” restaurant co-owner Ron Diaz said. “I couldn't find the style of pizza—the flavor profile—I liked, so we opened [the restaurant].”
Husband-and-wife team Ron and Angie Diaz first gained local recognition from their food-truck-turned-coffee-shop Perky Beans Coffee and adjoining PB Cafe, but opening a pizza restaurant was the couples’ original dream. Ron discovered a passion for pizza making early in adulthood, and as he discovered his unique talent for Midwestern pies, it was only natural to envision opening a pizza restaurant with his wife.
“Ron was doing all of this research and putting [recipes] together. Of course, myself and the rest of our immediate family were the test subjects. So we used to have a lot of pizza parties,” Angie said.
“We were going to [open the restaurant in] 2008, and we couldn't find the right location or the right lease, or there was always something that was an obstacle. So we opted not to. That's when we went into the food truck business, and then that led into the coffee business,” Ron said. “This is part of over a decade of thinking. I actually had the recipes and everything since 2008. That's when I developed all the flavors—everything I wanted to do.”

Fast forward more than 10 years, and that dream has come true. The restaurant is committed to high-quality food for people who want an authentic, flavorful pizza experience.
The restaurant offers an array of pizzas, which include traditional favorites such as pepperoni, cheese and Margherita pizza, alongside rotating creative options like the chorizo pizza, which get switched out monthly. One of his proudest creations is the carne asada pizza, which features in-house marinated carne asada and Ron’s famous homemade cilantro pesto.
While all pizzas are good, the team has its favorites. Ron’s favorite pizza is named—drumroll, please—the Ronzoni pizza, which comes with red sauce, pepperoni, Italian sausage, garlic, mozzarella and fresh basil. Angie’s favorite is the lasagna pizza, which also comes with red sauce but is smothered with meatballs, a three-cheese blend, ricotta cheese, garlic and fresh basil. Customers come for the pizza and stay for the pizza.
“We get a lot [customers from] the East Coast, New Jersey, New York, Chicago, Midwest, Indiana. All the people that are moving in from that area really like the pizza,” Ron said.
The restaurant clearly doesn’t skimp on flavor, and Ron is especially selective when it comes to ingredients; he knows what he wants and makes his preferences clear to vendors like Sysco and PFG Food Service.
“The flour that I use is different from most pizzerias. It's things like that that make us different from most every other pizzeria that goes down the vendor list and just picks off what's off the list,” Ron said. “The sausage is more of a high fennel, kind of an herbal sausage. The pepperoni is more of an old-style pepperoni—not like the current mass-produced stuff. Everything is different, and [I’m] picky on the cheese. It has to be a high butter fat content cheese that melts really well, very flavorful.”

The pizzas are great, and the restaurant's specials and relaxing atmosphere make them even better. The restaurant also offers a daily lunch special from 11 a.m.-3 p.m., where people can get an individual pizza, a salad and drink for only $12.50.

“[We provide] something approachable—comfortable, where people can bring their families. We've got some TVs in there, so there's always sports games and stuff that are on,” Ron said. “Just come on in, sit down, enjoy some music, watch TV and have some great food.”
