The details
Co-owner and United States Marine Corps veteran Eduardo “Eddie” Ramirez said he opened his food trailer after the start of the pandemic. His wife and co-owner Adrianna Ramirez also runs the business with the help of their four children.
“We started our food truck right after COVID[-19] hit and turned out to be a hit. We have always hosted parties and cookouts ... so my wife supported me and we decided to start the food truck business,” Ramirez said.
Originally from El Paso, Ramirez said he offers Chico’s-inspired tacos—rolled taquitos topped with a soup-like sauce. Additionally, the restaurant offers bacon-wrapped hot dogs, street tacos, birria tacos and other items.
