“We wanted to create something that people would enjoy as well as [create] an environment where people could be social and have a good time,” Mike said.
The brewery does not have TVs or loud music playing to help achieve the goal of an atmosphere where people can be focused on gathering socially.
Prior to opening, the building needed renovations, which led to some delays in opening the business.
This is our first commercial build, so it was a big learning experience for us,” Mike said. “Then you add the manufacturing and all the utility needs for that, and the layout of the existing building. If we did it from the ground up, it would have been so much easier.”
Despite these challenges, Gather Brewing successfully launched and has established itself within the Aviation District, which the city of Universal City is working to develop.
The eatery’s menu offers a selection of burgers, pizzas, fusion items and other pub foods, which Mike gained inspiration for during his time in the Coast Guard.
“A lot of the recipes were [researched and developed] from my time in the U.S. Coast Guard,” Mike said. “I was a cook there, so I managed a beach restaurant and worked on ships, and got my recipes straight.”
Popular items at Gather Brewing include the smashburger topped with a signature sauce and the Korean brisket tacos.
Apart from the food, the Voellers take pride in the different beers that are offered and made in house.
“We love Belgian style beer,” Mike said. “That was one of the first craft beers that we really fell in love with, so we usually have three or four of that style at a time. We really only brew things that we love to drink.”
